FUNTASTIC FRIDAY LINK PARTY 399 AND CINNAMON OATMEAL COOKIES

This week on Two Chicks and a Mom, I shared a recipe and some ideas using those backyard FRESH EGGS!  We have a few of those "laying" around haha.

WHAT TO MAKE WITH ALL THOSE BACKYARD EGGS? BACK TO BASICS 101



So now you have your little backyard flock of hens and are waiting on them to produce eggs (usually at 4 to 6 months of age, depending on breed).  What are your plans for those eggs once they start coming?  Take into account how many hens you have, that they usually only lay one egg per day and there are "off days".  We have four hens and mostly get four eggs each day in the summer but there have been days, especially in this high 90-degree heat, we have only gotten one egg or two!  As long as the girls are eating and drinking well, no need to worry.  ALWAYS make sure they have access to clean, fresh water at all times.



We share some of our eggs with neighbors and friends, who are more than happy to receive them. 





Of course, we use them for our own meals as well.  Today I thought I would share a recipe with you that I received at a church meeting years ago and was a go-to for my family for years and still is.

Some call this dish "DUTCH BABIES' but my recipe came as "POPEYE PANCAKES" so that is what I will refer to it as.  Do you have another name for this recipe?  If so, share in the comments.




POPEYE PANCAKES

Six fresh eggs
One cube butter
One cup milk
One cup white all-purpose flour
Dash of salt
1/2 cup granulated sugar
1/2 tsp vanilla

Heat oven to 350 degrees
Melt butter inside of 9"x 13" casserole dish

Place above ingredients (except butter) into blender pitcher.  Blend for approximately two minutes, till foamy.  Pour mixture over melted butter into casserole dish.  Optional: you can add six more thin slices of butter t/o top of mixture to give it more of a "pop" look. 

Bake in 350-degree oven for approximately 20 minutes.  Edges of pancake will appear "curled" and browned.  Remove from oven and allow to cool for five minutes and then cut into squares.  Serve warm with powdered sugar, syrup, jam, jelly or fresh berries!


Of course, you can make cookies, cakes, egg salad, quiche, scrambled eggs, fried eggs, hardboiled eggs, Eggs Benedict, eggs over easy, etc.  The possibilities are endless and as I mentioned earlier, share or even sell eggs (check with local laws and ordinances first).
