Winter is upon us, even if you live in Florida, as of this writing. Nothing is better than a hot bowl of soup to warm you up. To make it even better, a few minutes of prep time and a few hours in the crockpot and you have dinner!
The family loved this soup that I made yesterday and the leftovers will be yummy later today! I especially liked it that I could make it in the crockpot (except for the ground beef that I cooked the day before). Lots of fiber, nutrients and protein, too!
FAMILY FAVORITE CROCKPOT SOUP
One carton of organic chicken broth -- 32 oz.
One can cut green beans
One can dark red kidney beans (rinsed and drained)
One can white beans, such as navy beans (rinsed and drained)
1/2 pound of ground beef, cooked and drained
3 to 4 chorizo sausages (I used Fall's Brand but I live in Nevada), sliced into bite-size pieces
One package frozen organic spinach, 10 oz
Fresh baby carrots or 3 to 4 large carrots, sliced
Salt and pepper to taste
Dash of Italian Seasoning
Add all ingredients to your crockpot and turn the pot on high setting. Stir occasionally (if you are home lol) and cook for 3 to 4 hours. Serve as is or with parmesan on top!
