Hi there! Today I wanted to share a delicious recipe that I have had for many years. It was always a big hit for my boys, and then my girls later on. We made it today for our grandkids' last day of school (Mom drops them off before she goes to work). I have had people tell me they call them German Pancakes, Dutch Babies, etc. Have you made these and if so, what do you call them?
POPEYE PANCAKES
Six Tablespoons butter
Six whole eggs
One cup milk
One cup all-purpose flour
One-half cup granulated sugar
One-half teaspoon vanilla extract
Dash salt
Heat oven to 350 degrees Fahrenheit. Place butter in a 9 x 13 inch casserole dish and allow to melt. Meanwhile, add all other ingredients into blender pitcher and mix on high for about 2 minutes, until foamy. Pour over melted butter in pan. Allow to bake for approximately 20 minutes, till slightly golden on top. The pancakes will appear "bumpy" in some areas, thus the name "Popeye" (I supposed lol).
Serve with powdered sugar, jam or syrup, along with sausage, bacon, or fruit. Enjoy!
