GOOD EATS!

SUMMER LOVIN' BBQ SAUCE

I found a recipe similar to this years ago in a magazine ad--can't even recall which one it was now.  My boys were young at the time so I remember it had chili powder in the recipe and I didn't feel that was a good option for my young kids.  So, I removed the chili powder and played with the recipe a bit.

This sauce has been a family favorite ever since!  If I even dare to use bottled barbecue sauce, believe me, I hear about it from someone during dinner.  It tastes great on pork ribs (above), chicken, even meatballs or Little Smokies.  Just as I did, feel free to "play" with the recipe to suit your family's culinary tastes--make it spicier, sweeter, etc.  **I don't measure my ingredients--just add some of this and that.  I do have certain ratios that look correct to me so I will do my best to follow that in the recipe.  And remember, taste as you go and make it your own!

1 cup mayonnaise
1 cup catsup (or ketchup--whatever tickles your fancy)
1/2 cup yellow mustard
1/8 to 1/4 cup Worcestershire sauce
1/2 cup brown sugar

Mix all ingredients until combined.  Taste--want it a little sweeter?  Add more brown sugar.
A little more tart? Less sugar or more catsup.  If you want to spice it up, add a dash of hot sauce or a pinch of chili powder.  Place over meat last 5 minutes of cooking time.  

As I said earlier, taste the sauce and add ingredients to please yourself and your family!

Laie, Hawaii

Hawaii - a HUGE tourist destination.  There is so much to do, but what do you do when you first get here?  In January I moved to Hawaii to attend school and still have two more years to go.  I hope that with these blog posts, it will help you when you plan a trip here- to plan a wonderful trip that you are able to make the most of.
I live on the island of Oahu in the small town of Laie.  It is home of The Polynesian Cultural Center and the absolutely beautiful Laie Temple.  It's about an hour from Honolulu and only minutes away from other big tourist attractions such as Haleiwa, Sunset Beach, Turtle Bay, etc.

Alright, I'll do my best to get to all of these attractions and to fill you in on why you must visit them, but for now I'm going to focus on the Laie Temple.  I live literally 5 minutes from the temple.  Day or night, that temple is stunning.  Whether you are a member of the Church of Jesus Christ of Latter-Day Saints or not, it is definitely a place to visit for it's beauty.
A little history about this temple is it was dedicated by Heber J. Grant on November 27, 1919 but rededicated by Spencer W. Kimball on June 13, 1978 and again by President Thomas S. Monson on November 21, 2010 due to expansion, upgrading, and remodeling.  It's the first temple to be built outside the continental Unite States.
George Q. Cannon, who was one of the first 10 original missionaries to come to Hawaii, was to promote the idea of an Hawaiian temple among his congregations.  In 1915, Joseph F. Smith (the sixth president of the LDS church) announced the building of the temple and chose Laie for it's construction.  Construction began in February 1916 and some materials used to build the temple were crushed lava rock and reinforced concrete.
There are four large friezes (Friezes are the part of a classical entablature between the architrave and the cornice, usually decorated with sculpture in low relief). (All the statues and friezes were designed by two brothers whose names are J. Leo Fairbanks and Avard Fairbanks.) The north one represents the story of the Book of Mormon, the west shows the people of the Old Testament, the south represents the New Testament and the Apostasy, and on the east side the restoration of the Church through Joseph Smith is shown.  There are several reflecting pools and the uppermost pool is a maternity fountain.  It honors Hawaiian Motherhood and is to represent them pouring their love, hope, and care onto their children.
There are also other statues such as Joseph Smith being blessed by his father and one of the Prophet Lehi.
The temple has a Family History Center and Visitors' Center.  Whether you're a member of the church or not, if you are ever in Laie, I highly recommend stopping by to see the beautiful temple and visit the Visitors' Center.  It such an amazing sight and such a peaceful and quiet place to spend some time.

SWEET TREAT!



These cookies are so delicious....and easy...and recipe-requested (not sure that is an actual word).  I have been making these cookies for over 20 years.  Make them for home, kids and hubby; make some for the family who just moved in or for a co-worker's birthday.

Mind you, you will be asked to make these again....and again.  When my sons would have their friends over, two batches didn't last long.  Be prepared to be questioned, "Are there any more of those chocolate cookies left"?  Soooo good.



What could be even better than such compliments?  A great recipe made with a cake mix!  Yep, cake mix, plus eggs, shortening, chocolate chips , and powdered sugar.  THAT IS ALL!  Quick and easy!

Maybe I should add the recipe now.......

Chocolate Chocolate Chip Cookies

One Betty Crocker Super-Moist Chocolate cake mix (that is the brand I have always used)--choose from milk chocolate, German Chocolate, Fudge, etc.
2/3 cup shortening
2 eggs or 1/2 cup pasteurized liquid egg product

Pour half the dry cake mix into a mixing bowl; add eggs and shortening--mix with hand mixer till combined.  Pour other half dry mix into bowl, stir with spoon till mixed.  (If too dry, add very small amounts water till better consistency).  Pour in 11 ounce package of semi-sweet chocolate chips, white chips, milk chocolate chips or, as I do, add a few of each. Make an approximately one inch ball with dough, roll in powdered sugar, flatten slightly with hand and place on ungreased baking sheet.  Bake at 350 degrees for approximately 8 minutes--I always take my cookies out of oven while still slightly soft in center and allow to continue setting up on sheet outside of oven.  Sprinkle with more powdered sugar (to make 'em pretty); after 5 minutes move to cooling rack on counter.

At Christmas time I like to use a white cake mix and replace the chips with red and green M&Ms.  They look so festive!  So, try these out.  You may need to adjust your cooking time to your oven--anywhere from 8 to 10 minutes should do it. If you like your cookies a bit more crisp, leave them in longer than 8.  Like your cookies with a soft center, bake 8 or even 7 1/2 minutes.
