My son plants a garden on our side yard most years. Some years we are drowning in tomatoes or squash (not a bad thing) but this year he planted several types of lettuce--so much better than iceberg lettuce!
The varieties include:
Four Season lettuce
Nevada lettuce
Giant Ceasar lettuce
Red Salad Bowl lettuce
**Don't ask me which one is which but I am guessing the Red-leafed lettuce is "Red Salad Bowl lettuce" haha.
Every evening he goes out to the garden, cuts off some greens, picks a few cherry tomatoes and a couple of carrots and washes the dust away from the veggies.
Summer Delight Homegrown Salad
Variety of lettuce (as mentioned above or a package of store-bought greens)
Tomatoes (cherry or what you have handy)
1 to 2 small carrots, sliced into bite-size pieces
Red or green onions, chopped
Kalamata olives
Shredded Cheddar cheese
Gouda or Feta Cheese
Extra Virgin Olive Oil
Balsamic Vinegar
French's Mustard (yep)
Salt and Pepper to taste
Place the washed vegetables in a large salad bowl. Mix the oil, S&P, mustard, and vinegar together in separate bowl (check for taste. I know the mustard sounds weird but it really does add a lovely "bite" to it). Also, we don't really measure the ingredients--if you have been cooking for a while, you get it.
Add in the olives, cheeses, and onions and the dressing mix--toss lightly. You can certainly figure out what works for you and even use store bought dressing. We kind of like the fact that most of the ingredients are put together here at home!
