TACO-FLAVORED MEAT AND PASTA DISH


I wasn't sure what to make for dinner tonight. I knew it would include ground beef since I had thawed some out but that was as far as I got until I cooked the meat. I grabbed some Thrive Market Taco Seasoning Mix, canned corn, a can of Rotel, fusilli pasta, and tomato paste to add. I also pondered using kidney beans instead of pasta but am glad I went with the pasta.


TACO-FLAVORED MEAT AND PASTA 

2 POUNDS GROUND BEEF (COOKED)
TWO PACKETS TACO SEASONING MIX
ONE SMALL CAN ROTEL DICED TOMATOES AND CHILES
ONE SMALL CAN (6 OZ.) TOMATO PASTE
8 OZ. OF UNCOOKED FUSILLI (OR OTHER PASTA)
DASH OF SMOKED PAPRIKA
SALT AND PEPPER TO TASTE
1 TO 2 CUPS SHREDDED EXTRA SHARP CHEDDAR

Brown ground beef till done; drain fat if needed.
Stir in the taco seasoning, paprika, salt/pepper. Add tomato paste and Rotel, stir. Add the pasta and corn (liquid included).
Add water if needed so pasta will cook well. Stir occasionally. Once pasta is tender, add shredded cheese to top of pasta, replace lid to pan to assist with cheese melting (turn off heat) and serve!

Quick and easy dish alone or add a salad. I actually added a few slices of fresh avocado to mine!
