This time of the year, with cooler temperatures and shorter days, it is nice to have something quick and easy to make for dinner. A casserole and a salad or vegetable can be just right, especially with the casserole coming together fairly quickly.
My kids liked this casserole but I am pretty sure that I at least doubled the recipe--especially with 5 boys in the house. Feel free to adjust the amounts as needed.
TORTILLA CASSEROLE
1.5 to 2 pounds ground beef
One package small flour or corn tortillas (I used 6 corn tortillas in this casserole I made)
8 oz. shredded cheddar or colby jack cheese
One can (10.5 oz.) Cream of Chicken soup
One can (4 oz.) diced green chiles
Brown ground beef in frying pan, then drain fat and rinse. Place in pan again and add soup and green chiles and mix well and warm.
Lightly grease a casserole dish (mine was a 10 inch round) and cover the bottom with the meat mixture.
Add 1 to 2 tortillas, then add shredded cheese. Repeat layers until you end with cheese on top.
Bake at 350 degrees for 25 to 30 minutes.
