It is summer and it's often too hot to cook. Actually, I can't cook much since we are still in the process of remodeling our kitchen. Thank goodness for microwaves, InstaPots, and slow cookers!
Here's a recipe that doesn't require any cooking at all. I serve it with a side of French bread and butter and it's a pretty easy meal.
SEAFOOD SALAD
1 bag mixed salad greens (washed)
1 small jar green olives
2 to 3 stalks of celery (washed)
1 package Imitation Crab (I buy mine at the meat counter)
mayonnaise
juice from green olives (above)
salt & pepper to taste
Slice the celery into thin slices (I usually slice mine down the middle vertically and then slice away).
Place the washed greens, celery, and green olives into a large serving bowl. In separate mixing bowl place 1/2 to 1 cup mayo and 2 teaspoons of olive juice into bowl; stir lightly till mixed. **I really don't measure these ingredients so just play with the amounts until you get the consistency that you want (should be consistency of 1000 Island dressing) and the amount you want on your salad**
Add black pepper to taste and lightly salt if you wish--with the olives I don't know that you need to add any.
Rinse the imitation crab meat off (I'm just weird about that) and then tear the chunks into smaller pieces and add to salad. Lightly toss.
Serve immediately with French or Sourdough bread. Yum!
