It's September so some believe it's "HALLOWEEN EVE" LOL. No matter what you believe, we have a fun and tasty recipe for you to make during the Halloween season and/or especially on Halloween.
These Monster Eye Meatballs are tasty by themselves or with pasta. The cheese adds a bit more protein for your little monsters, too. Granted, not all kids will relish the olives but those are easy enough to remove, after the initial presentation.
MONSTER EYE MEATBALL RECIPE
*Of course, you can use your own recipe or use frozen meatballs from the store!
One pound ground beef
Half chopped white or yellow onion
1/4 cup Italian-seasoned bread crumbs
1/4 cup shredded Parmesan cheese
1 egg
Dash salt and pepper
For eyeballs:
Mozzarella cheese
Small can sliced black olives
Mix all together in bowl and form into meatballs. Fry in pan (with oil or butter, if needed). Once completely cooked, place on paper towel on platter. While still warm, cut small slices of mozzarella cheese and round edges. Place one slice on each meatball and top with one small slice of black olive.
Add meatballs, "eye side up" onto prepared spaghetti/pasta with sauce.
Fun for the kids and yummy, too!
Cut small slices of mozzarella cheese, rounded off on the edges. Place on still-warm meatballs, as a piece4 of sliced black olives for the "pupils" and there you go!
Place eye up on spaghetti and ENJOY!
