Cheese Cracker Christmas Crack Candy


Here is a recipe that we have been making in our family for a long time--probably because it is easy and SWEET!  A few years ago I decided to change things up a bit and sometimes I make it with cheese crackers instead of saltines (or even combine the two).  Guaranteed to bring a smile to the face of someone taking a bite!



Preheat oven to 350 degrees F.  Line a cookie sheet (with edges on it) with aluminum foil.  Place a sleeve of saltine crackers to fill the baking sheet (or use cheese crackers such as Cheez-its or a mix of the two crackers).  

Melt 2 sticks butter in a pan, add 1 cup dark brown sugar to melted butter and then bring to a hard boil for 2 minutes.  Stir to combine butter and brown sugar, then pour mixture over crackers; place pan in oven for 5 minutes.  Remove pan and sprinkle a 12 ounce bag of semi-sweet chocolate chips (or milk chocolate chips--this is your candy) and allow to melt for several minutes.  Using a spatula or wooden spoon, spread the melted chocolate over surface of cracker/brown sugar mixture.

Place a folded kitchen towel or pot holders on a shelf in the fridge--place pan in fridge--careful, it's hot!  Allow to cool and set up for an hour or so, then "crack" into pieces.  Store in airtight container in fridge as it is best served chilled.
